The label depicts a gold elephant attempting to balance on a circus
stool. The reason, of course, is that an essential characteristic of any well-made wine should be a good balance of its various taste components. The important point about balance with this wine is the
proportions of grapes chosen by winemaker Kobus Rossouw. These are not given but the taster would hazard a guess at something a little less than 80% Chardonnay and 20% Semillon.
This refreshing
wine has a pale golden colour, offers peaches on its aroma and these are confirmed on a middleweight palate with buttery notes, some vanilla and stone fruit flavours.
Food guide: With calamari,
mussels, tuna, salmon, veal, chicken, ham, pork and soft mild cheeses.
