A snazzy label depicts a large elephant attempting to balance on a
circus stool. The point, of course, is that an essential characteristic of any well-made wine should be a good balance of its various taste components. Most of us know what an overoaked wine tastes like
- when the back of your teeth become coated in oak tannins. In contrast, light oak aging gives an attractive texture. There is no danger of excess with this blend because it is 100% unoaked.
The
important point about balance with this wine is the proportion of grapes chosen by winemaker Kobus Rossouw. 63% Cabernet Sauvignon is blended with 37% Shiraz. The Cabernet lends structure and flavours of
currants and berries, while the Shiraz brings plums, summer fruits and a little pepper. It is soft in the mouth but full and represents really good value for money.
